Comments: Please Sir, May I have Some More?

I want to hear the benefits so far. I can't really give up caffeine unless I want a headache that will last for over a week (trust me this would be one that would have me in bed with a bucket beside it, not just sitting at my desk wishing Ibuprofen would work). So I've never taken my change in diet to the same level you've managed over the last few days. However, I'm always glad to hear when this works for someone.

I love steel cut oats & your post made me want to gag. I promise there is a better way.

Boil 3 cups water (or 1.5c water + 1.5c milk) w/ a pinch of salt. Add 1 c. steel cut oats. Reduce heat to low, cover, and cook about 15-20 min, stirring occasionally (more often if using it doesn't scald on the bottom of the pan). Remove from heat & let stand 2-5 min.

I always use half water & half skim milk at a 3-1 liquid-to-oats ratio, and I often add some combination of brown sugar, pure maple syrup, pecans, cinnamon, and flax seed when I add the oats. It's actually quite delicious.

I don't like the recipes that tell you to let it soak overnight because it tends to absorb all the water and be too dry. When you just boil it longer, the texture ends up closer to old-fashioned oatmeal than rice. I often make a large batch & reheat in the microwave by the bowlful with a splash of milk for the next few days, too.
